Ingredients:
2 cups pumpkin puree (Cooked and blended)
1 tsp. stevia
1/2 cup maple syrup
1/2 cup olive oil
4 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg (optional)
1/2 teaspoon ground ginger (optional)
1/4 teaspoon ground cloves (optional)
1 cup chopped nuts or raisins (optional)
Instructions:
Preheat your oven to 350°F (175°C) and grease a cake pan.
Beat the eggs for 5 minutes (in a blender)
In a large bowl, combine the pumpkin puree, stevia, maple syrup, olive oil, and eggs. Mix well until the ingredients are thoroughly combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
If desired, fold in chopped nuts or raisins.
Pour the batter into the prepared cake pan and smooth the top.
Bake in the preheated oven for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
