Ingredients
3/4 cup olive oil
1/2 cup maple syrup
3 large eggs
2 tbsp Greek yogurt
1 3/4 cups flour

1 tbsp cinnamon

2 tbsp protein powder
1 tsp. stevia
2.5 cups mashed butternut squash (or canned pumpkin puree)
Instructions
Preheat oven to 350°F (175°C) and prepare muffin tin.
Whisk olive oil and maple syrup, add eggs one at a time, then mix in yogurt.
Combine flour, baking powder, cinnamon, nutmeg, and protein powder.
Gradually fold dry mixture into wet ingredients until just combined.
Stir in butternut squash until smooth.
Fill muffin tin 3/4 full with batter.
Bake for 18–22 minutes, until a toothpick comes out clean
