Almond Flour Cookies
Ingredients:
2 cups almond flour
1/4 cup plain Greek yogurt
2 tsp stevia (adjust to taste)
2 tbsp maple syrup
1/2 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract
1/4 cup melted coconut oil (or butter)

Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix Dry Ingredients: In a large bowl, whisk together the almond flour, baking soda, and salt.
Mix Wet Ingredients: In another bowl, mix the Greek yogurt, stevia, maple syrup, vanilla extract, and melted coconut oil until well combined.
Combine Ingredients: Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. The dough should be slightly sticky but manageable.
Shape Cookies: Using a tablespoon or a cookie scoop, portion out the dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon or your hand.
Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Serve: Enjoy your almond flour cookies with a dollop of extra Greek yogurt if desired!
