Almond Flour Cookies

Ingredients:

  • 2 cups almond flour

  • 1/4 cup plain Greek yogurt

  • 2 tsp stevia (adjust to taste)

  • 2 tbsp maple syrup

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp vanilla extract

  • 1/4 cup melted coconut oil (or butter)

  • Blueberries


Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Mix Dry Ingredients: In a large bowl, whisk together the almond flour, baking soda, and salt.

  3. Mix Wet Ingredients: In another bowl, mix the Greek yogurt, stevia, maple syrup, vanilla extract, and melted coconut oil until well combined.

  4. Combine Ingredients: Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. The dough should be slightly sticky but manageable.

  5. Shape Cookies: Using a tablespoon or a cookie scoop, portion out the dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon or your hand.

  6. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

  7. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  8. Serve: Enjoy your almond flour cookies with a dollop of extra Greek yogurt if desired!

Feel free to add in any extras like dark chocolate chips, chopped nuts, or dried fruit to customize your cookies further
