Easy Almond Cake

Made with blanched almond flour, monk fruit sweetener, and a hint of lemon zest, this cake is light, fluffy, and packed with flavor. Ingredients

  • 2 cups blanched almond flour

  • 4 eggs

  • 1/4 cup monk fruit sweetener

  • 1 tsp vanilla extract

  • 1/2 tsp baking powder

  • 1 tsp lemon zest

  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a small cake pan.

  2. In a clean blender, beat the egg whites on low speed for a couple of minutes until foamy. Transfer to a separate bowl.

  3. In the blender, mix the egg yolks, monk fruit sweetener, lemon zest, and vanilla extract until light and smooth.

  4. Add almond flour, baking powder, and salt to the yolk mixture, stirring until well combined.

  5. Gently fold in the beaten egg whites, using minimal stirring to maintain the fluffiness.

  6. Pour the batter into the prepared cake pan. Bake for 20-25 minutes in the oven or air fryer until golden brown and a toothpick inserted in the center comes out clean.

  7. Let the cake cool before slicing.

Notice: If divided into 10 slices, each piece contains approximately 120 calories.
