Ingredients:
5 tbsp. almond flour
1 tbsp psyllium husk powder
1/2 tsp baking powder
1/4 tsp salt
1 maple syrup
1/4 cup water
1 large eggs
1/2 tsp vanilla extract
Coconut oil or butter for cooking
Instructions:
In a large mixing bowl, combine the almond flour, psyllium husk powder, baking powder, and salt.
In another bowl, whisk together the honey or maple syrup, almond milk, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until well combined. The mixture will be thick.
Heat a non-stick skillet or griddle over medium heat. Add a dollop of coconut oil or butter.
Using a 1/4 measuring cup, scoop the batter onto the skillet. Use a spatula to gently spread the batter into a round shape. Cook for about 2-3 minutes on each side or until golden brown.
Serve hot with your favorite toppings such as fresh fruit, whipped cream, or syrup.
