Banana Almond Cake  


Ingredients: 

  • 3 bananas, mashed 

  • 2 1/2 cups almond flour 

  • 1/2 cup arrowroot flour 

  • 3 tablespoons maple syrup 

  • 1 1/2 teaspoon baking soda 

  • 1/4 teaspoon salt 

  • 3 eggs 

  • 1 1/2 teaspoon vanilla extract 

  • Optional: Chopped almond flake for topping 

Instructions: 

  • Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper for easy removal. 

  • Beat 3 eggs, and Vanilla extract for 3 mins 

  • Add the banana to the eggs, mix it for 1 minutes 

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. 

  • Pour the batter into the prepared cake pan and spread it out evenly. 

  • If desired, sprinkle chopped nuts Bake in the preheated oven for 30-35 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean. 

  • Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully transfer it to a wire rack to cool completely. 

  • Once cooled, slice and serve your banana almond flour cake as is, or top it with whipped cream, yogurt, or your favorite frosting. 

  • You may use the bake option in your air fryer.

 Note: This cake is a gluten-free, no added sugar cake

Note: If you divide this cake into 25 pieces, every piece has roughly 100 calories
