Almond Flour Bagels with Yogurt

Ingredients:

  • 3 cups almond flour

  • 3-4 tablespoons yogurt or kefir

  • 1 ½ teaspoons baking powder

  • 1 teaspoon salt

  • Optional toppings: sesame seeds, poppy seeds, everything bagel seasoning, etc.

  • Egg yolk or Saffron dissolved in water( optional for topping)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Mix Dry Ingredients: In a large bowl, mix all together.

  3. Combine Ingredients: Pour the yogurt into the dry ingredients and mix until a dough forms. You may need to use your hands to fully incorporate the ingredients.

  4. Form Bagels: Divide the dough into 12 equal portions. Roll each portion into a ball, then flatten slightly to form a bagel shape. You can use your finger to poke a hole in the center and gently shape it.

  5. Add Toppings (Optional): If desired, sprinkle your choice of toppings over the bagels and lightly press them into the dough. to have a more appealing hue, consider brushing saffron or beaten egg yolk onto the tops of the bagels prior to sprinkling on the seeds.

  6. Bake: Place the shaped bagels onto the prepared baking sheet. Bake in the preheated oven for about 25-30 minutes, or until the bagels are golden brown and firm to the touch.

  7. Cool and Enjoy: Allow the bagels to cool on a wire rack before slicing and serving. Enjoy them plain or with your favorite toppings like cream cheese, smoked salmon, or avocado.
