Spinach Nargesi Recipe (Iranian Cuisine):
Ingredients
2 tablespoons extra-virgin olive oil
1 cup red onion, chopped
3 garlic cloves, minced
1 tbsp. Dried fenugreek
5 cups baby spinach, roughly chopped
4 eggs
1 teaspoon turmeric
1/2 teaspoon cayenne
1 teaspoon Himalayan salt (more if needed)
Directions
Heat extra virgin olive oil in a large pan over medium heat.
Once the olive oil is shimmery, sauté red onion until it's translucent and golden. Sprinkle turmeric, cayenne, and salt on the spinach and eggs, cover, and let it cook for about five to seven minutes
Add in minced garlic and chopped baby spinach. Stir and cook for a couple of minutes
Add fenugreek to them and simmer for another minute
Add the eggs into the pan, one by one but don't stir until the egg whites are fully cooked (yolk could be runny or fully cooked)
Serve warm with fresh bread.
