No-Sugar Apple Almond Chia Cookies

  • 3 cups almond flour

  • 2 tablespoons chia seeds

  • 2 tablespoons freshly ground flaxseeds

  • 1 teaspoon salt

  • 1 cup plain yogurt (Greek or regular, unsweetened)

  • 2 cups water

  • 2 mashed apples (optional, for natural sweetness)

  • 1 teaspoon vanilla extract (optional)

  • 1 teaspoon cinnamon

  • 1 tablespoon baking powder

  • 2–3 tablespoons apple cider vinegar (ACV)

  • 1/4 tsp stevia (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Soak the chia seeds in water for 4–8 hours until they form a gel-like texture.

  3. Mash the apples (if using) and place them in a large mixing bowl.

  4. Add all wet ingredients (soaked chia, yogurt, vanilla extract, ACV) to the bowl and stir well.

  5. In a separate bowl, mix the dry ingredients: almond flour, ground flaxseeds, salt, cinnamon, and baking powder.

  6. Combine the dry mixture with the wet mixture. Stir until a soft dough forms. If the dough feels too wet or sticky, let it rest for a couple of hours—or ideally, store it in a sealed container in the fridge for 6–8 hours to allow the ingredients to fully hydrate.

  7. Scoop out spoonfuls of the dough, shape them into cookies, and place them on the prepared baking sheet. Flatten them slightly.

  8. Bake for 20–25 minutes, flipping halfway through to ensure both sides are golden brown.

  9. Let the cookies cool on the tray for 5 minutes, then transfer them to a wire rack to finish cooling.
